Now let’s get snackable.
Hello peeps. And happy almost Thanksgiving. I am going to San Francisco tomorrow to celebrate with my SIL (my husband’s sister) and her kids - and we’re bringing my mom. Should be festive and fun. And while I am there, although most of the trip is pure unadulterated pleasure, I am doing an event at the Ferry Market with Foodwise - I will be demo’ing the Garlicky Creamed Greens Pie (think creamed spinach in a pie shell) from Salty Cheesy Herby Crispy Snackable Bakes, for the masses at the market, sharing said pie with them and signing books. So, if you live in SF and want to come, please do! It’s Saturday the 30th (my bday!) at 11. Here are the deets and here is a photo of the pie to whet your savory whistle.
Oh, and if you happen to own a copy of Salty Cheesy already, first, thank you, and second, this savory pie would be excellent as a Thanksgiving side, just sayin’. And speaking of Thanksgiving, today I am sharing an excellent holiday hors d’oeuvre/appetizer/snack recipe with you; as well as a scone recipe that is absolutely perfect for the Thanksgiving bread basket; as well as (yes, it is basically Christmas around here) a VIRAL melted butter pie dough recipe - and ALL of these recipes are from Salty Cheesy! And yes: I realize that by the time you read this letter the turkey day menu might be set in stone or the holiday might be done and dusted. BUT there are more holidays in your future! And definitely more regular old Tuesdays that need special treats to make them not so regular. But before I jump into the recipes, I thought you might want to know that little old Salty Cheesy FINALLY had her national TV debut.
The segment is here, if you’re inclined to give it a watch, but essentially the editorial director of Amazon Books went on CBS Mornings and discussed a handful (like not that many!) of her fave cookbooks for the holidays and Salty Cheesy was one of them! I was thrilled (obvs). And she baked from the book! The Cocktail Hour Loaf - and she loved it . . . anyhoo . . . how about some recipes?
First up is a snacky item from Salty Cheesy: the Baby Ham and Cheese Croissants. I made these cuties with Kerrygold cheese (and think you should, too), some ham and a little mustard plus store bought puff pastry and that’s it! Like literally a 4-ingredient app!
The croissants come together quickly, but the assembly can be a tiny bit confusing (the cutting and rolling, that is) so check out this video I made, so you can see exactly what you need to do. The recipe is here. Next up is an item for the t’giving bread basket: Sage Butter Scones.
These cuties are not only gorgeous, but they call for melted butter (sage infused melted butter, if you must know). I used Kerrygold butter, which, again, I highly recommend (I mean, yes, Kerrygold does sponsor my podcast, but I legit LOVE their butter and cheese; and whether they were sponsoring me or not, I’d be buying both products!) and because it is melted, the assembly of these scones is lickity split and the flavor? Otherworldly.
These would be FANTASTIC at Thanksgiving IF you have the five minutes it takes to whip them up, and if not, they will be equally good whenever the whipping happens (like next Tuesday). The scones recipe is here and you can watch me make them here. Finally, I want to share my VIRAL magic melted butter butter pie dough recipe with you.
This magic crust is from Salty Cheesy, but is actually included in my recipe for Blueberry Crumb Topped Pie on my website, so you will be getting a two-fer here (blueberry pie PLUS a magic crust), and it is so crazy easy to assemble and removes all of the scariness surrounding pie-making (you’re welcome) as well as the time. I made a video on Instagram in which I assembled this dough and it went viral! As of the writing of this letter, the video has 1.7 million views - wow. Anyway, this crust is best used for pies that do not need par-baking or a top crust (think pecan) and it works great with those pies that require a crumb topping. The recipe is here (within this blueberry pie recipe) and the viral video is here.
This letter is one of my favorite things to write, but it’s totally a labor of love and has been known to take away from other projects, at times. I’m able to write this letter and offer more recipes thanks to the support of my amazing and wonderful paid subscribers.
Upgrade your subscription and you’ll get an additional monthly newsletter filled with my travels (like the full behind-the-scenes of my book tour) bonus recipes that aren’t available elsewhere and tons of tidbits about recipe creation.
On this week’s episode of She’s My Cherry Pie . . .
Alrighty, now the pod. This past week’s guest was Kristen Kish, a former winner and now host of Top Chef. She and I talked all about her fantastic Two Bread Stuffing, which I happen to make every year. It’s a good one. Hope you’ll give it a listen here.
The stuffing recipe is here, and it is ahhhhmazing . . .
Have you watched?
I am eager to start the new season of The Diplomat (but am still plodding through The Good Wife! So many seasons! So many episodes!) as I loved season one. Have you watched? Thoughts?
Have you read?
I just started Percival Everett’s James and I am in love. It is the “reimagining” of The Adventures of Huckleberry Finn told from the perspective of Jim (or James), the enslaved runaway with whom Huck adventures. It is hilarious and heartbreaking and brilliant and I already can’t put it down. The book just won the National Book Award in fiction and I cannot recommend it enough.
Have you listened?
I’m still coming up short here - desperate to share a new true crime pod with you that I am loving, but there are none! Please suggest one, if it's a genre you listen to - or any other pods that I need to check out.
Alrighty, see you in two weeks and happy holidays.
