Unfortunately the batter is finicky because it needs to rise so much u don’t want to weigh it down. But spices or cinnamon would be fine!

Hi Jessie,

These look great, I was wondering if you could include the Peach Compote recipe you use to accompany the popovers? I have some frozen peaches in the freezer from this past years crop and would like to make these.

Of course! 2 cups (240 grams) sliced peaches, skins on or off

2 tablespoons granulated sugar

1 tablespoon lemon juice

1/4 teaspoon kosher salt

1/2 teaspoon vanilla extractTo make the compote, dice the peaches and combine them with the sugar, lemon juice and salt in a small saucepan. Cook on medium high heat until bubbling. Lower the heat to medium and continue cooking for about 10 minutes, stirring frequently. Off the heat, stir in the vanilla and transfer to a small bowl. Refrigerate, stirring occasionally, while you prepare the popovers

Jessie, sounds like a great recipe but a bit of confusion. At the top where you say prep time, 15 minutes, then bake time, 50 minutes. The instructions say to bake for 30 minutes or 25 minutes depending on the pan used. As I reading it wrong? I think a correction in one or the other is needed. Please clarify. Thanks, Kathy
